Salon privee menus are best if left to the insightful and expert design of the chef, Amaryll Schwertner. Each evening is individually shaped, and each has a unique menu representing the ingredients the farmers make available to us that day. Other considerations shaping the evening's menus are the wines our guests bring, dietary concerns, the tone of the group - business, celebratory, salon, and so on - and importantly, our seasonal hunger and a well-referenced response to the spectacular raw ingredients by which the cuisine of Boulettes Larder (day and night) is inspired by.
