CUSTOM HERB & SPICE BLENDS:

At boulettes larder, we custom-blend our own spices using the highest quality base ingredients from our spice apothecary. Depending on availability of source ingredients, we can custom-blend any of the following for you for pick up or mail order. Please give us at least one week to produce a spice blend.

Spice blends are sold by weight, with a 2 oz. minimum. Prices below are for 2 oz. of each blend. You are welcome to order more than 2 oz.

The minimum total for all mail order items is $25.

aleppo blend
10 spices including aleppo pepper, cinnamon, and cumin. Use with all lamb preparations and for stews with birds.

baharat
A mixture common to flavor mutton in the countries surrounding the Persian Gulf. Usually, the powder is fried quickly in butter before usage. Baharat contains pungent paprika, chiles and black pepper, a variety of aromatic sweet spices (cloves, cinnamon, nutmeg and cardamom), cumin and coriander.

This very aromatic and intensive mixture combines star anise with cassia, cloves, fennel and szechuan pepper. It is not hot, but to be used with care.

Classical "five spice" mixture of Bengal; the Bengali are famous all over India for their distinct cuisine. Panch phoron owes its special taste to the antagonism of sweet fennel and bitter fenugreek seeds besides cumin, nigella and radhuni, a local spice with celery flavor which is often substituted by black mustard seeds. Not hot.

A very old recipe from pre-revolutionary France, combining peppercorns with several aromatic spices (nutmeg, cloves and ginger). It may substitute pepper in nearly every dish, and imparts a richer taste. Ourbnv b/L blend is balanced and fresh.

ras el hanout
"Top of the shelf" Moroccan spice blend. Cumin, rose petals, long pepper, paprika, myrrh crystal, myrtle leaves, bay leaves, cinnamon, turmeric, ginger, anise. Extremely versatile. Sprinkle on chicken or fish before pan-frying, grilling or baking. Add to couscous or rice before cooking. Balanced, full-bodied blend, spicy yet floral, robust yet subtle.

shichimi togarashi (also called seven spice chile or seven flavor)
This blend (translates as seven-flavor or seven spice mix) is used throughout Japan as a table condiment, occupying much the same place that salt and pepper do in the American household. Contains Chinese Chile (sansho, a close relative of Sichuan pepper), a chili powder (togarashi), orange peel, seaweed (nori), ginger, poppy seeds and sesame seeds. Fairly hot. Togarashi has a special affinity for Japanese noodles and soups, but can also perk up fish, poultry and beef. Also good on spinach sautéed in a touch of sesame oil.

A condiment from Jordan, much used for fried or barbecued mutton. Its unusual taste derives from nutty sesame seeds, aromatic thyme and sour sumac. Hand mixed from: sumac, thyme leaves, white sesame seeds and salt.
